Tieu Quan grilled chopped chicken

There is a very famous grilled chopped chicken dish in Tieu Quan village, Phung Hung ward, Khoai Chau district.

Making grilled chopped chicken requires meticulousness. Lean chicken meat without bones and veins are chopped into small pieces, and then pound into paste. Before the pounding completion, mix chicken egg yolk, good-quality fish sauce, pepper, ginger and lard cut into tiny cubes with the paste and continue pounding. When the pounding is finished, it’s not easy to spread the chicken paste on a wattle by a spathe. If the pie is thin, it might be burned, however, if the pie is thick, it might not be cooked evenly. The pie must be grilled over charcoal (Longan charcoal is the best). Particularly, burning dry pine-cones with charcoal will make the pie more fragrant and delicious. Tieu Quan grilled chopped chicken should be eaten slowly to enjoy the greasy of a unique specialty.
